Ingredients

  • 60 g (½ cup) raw almonds, coarsely chopped (or 30 g raw apricot kernels for a more intense flavor)
  • 120 ml (½ cup) 80-proof vodka

Method

  1. Coarsely chop the almonds. Toasting them lightly in a dry pan for 3-4 minutes intensifies the flavor but is optional.
  2. Place in a clean glass jar. Pour the vodka over the almonds and seal.
  3. Store in a cool, dark place. Shake weekly.
  4. Strain and bottle after 6-8 weeks.
  5. *Storage:** Room temperature for up to 2 years.
  6. *Note:** True almond extract flavor comes from benzaldehyde, which is more concentrated in apricot kernels and bitter almonds. Regular sweet almonds will give a milder, nuttier flavor.
