Chocolate Peanut Butter Energy Balls

No-bake, five minutes, endlessly customizable. The snack that lives in every meal-prepper's fridge.

Ingredients

  • 100 g (1 cup) rolled oats
  • 130 g (½ cup) peanut butter (or any nut/seed butter)
  • 80 g (¼ cup) honey or maple syrup
  • 40 g (¼ cup) chocolate chips or cacao nibs
  • 2 Tbsp ground flaxseed
  • 1 tsp vanilla extract
  • Pinch of fine sea salt

Method

  1. Combine all ingredients in a bowl and stir until evenly mixed.
  2. Refrigerate 15-20 minutes to firm up (makes rolling easier).
  3. Roll into 1-inch balls using your hands. If too sticky, wet your hands slightly.
  4. *Variations:**
  5. **Coconut-date:** Replace chocolate chips with chopped dates and add ¼ cup shredded coconut
  6. **Almond joy:** Almond butter + coconut flakes + dark chocolate chips
  7. **Protein boost:** Add 2 Tbsp protein powder
  8. *Storage:** Refrigerator for 1-2 weeks in an airtight container. Freeze for up to 3 months.
