Crunchy Homemade Granola

Clusters of oats, nuts, and seeds bound together with honey and oil, baked until deeply golden. The secret to big clusters is not stirring during baking.

Time: 40 minutes  ·  Yield: About 800 g (8 cups)

Ingredients

  • 300 g (3 cups) rolled oats
  • 100 g (1 cup) sliced almonds or chopped pecans
  • 65 g (½ cup) unsweetened coconut flakes
  • 40 g (¼ cup) sesame seeds or sunflower seeds
  • ½ tsp fine sea salt
  • 1½ tsp cinnamon
  • 80 ml (⅓ cup) coconut oil or neutral oil, melted
  • 80 ml (⅓ cup) honey or maple syrup
  • 1 tsp vanilla extract
  • 100 g (¾ cup) dried fruit (raisins, cranberries, chopped apricots) — added after baking

Method

  1. Preheat oven to 165°C (325°F). Line a large rimmed baking sheet with parchment.
  2. In a large bowl, combine the oats, nuts, coconut, seeds, salt, and cinnamon.
  3. In a small bowl, whisk together the melted oil, honey, and vanilla. Pour over the oat mixture and toss until everything is evenly coated.
  4. Spread in an even layer on the prepared sheet, pressing it down gently with a spatula to compact it.
  5. Bake 30-35 minutes until golden brown. The key: do NOT stir. Let it bake undisturbed — this is how you get clusters. Rotate the pan halfway through for even browning.
  6. Remove from oven and let cool completely on the pan (it crisps as it cools). Once cool, break into clusters and toss with the dried fruit.
  7. *Storage:** Airtight container at room temperature for 2-3 weeks.
