Cucumber-Mint Water

Calling this a recipe is generous. It's more of a reminder that the simplest things are sometimes the best. On a hot summer day, cold water infused with cucumber and mint is more refreshing than any commercial drink you'll find.

Time: 5 minutes plus 1 hour infusing  ·  Yield: 2 quarts

Ingredients

  • 2 quarts cold water
  • 1 English cucumber (or 2 small garden cucumbers), thinly sliced
  • 10 to 12 fresh mint leaves, gently bruised
  • Juice of 1 lime (optional)
  • Ice

Method

  1. Combine the water, cucumber slices, and mint leaves in a large pitcher.
  2. Add lime juice if using.
  3. Refrigerate for at least 1 hour, or up to 8 hours. The longer it steeps, the more pronounced the flavor.
  4. Serve over ice.
  5. *Storage:** Best consumed the same day. After 24 hours, the cucumber gets soggy and the water takes on a slight bitterness.
  6. *Seasonal note:** For a variation, add thinly sliced lemon or a few slices of fresh ginger. Watermelon cubes are excellent too. This is the kind of thing you make a pitcher of and leave on the counter for anyone who walks through the kitchen.
