Date & Nut Energy Balls

Dense, naturally sweet, and packed with fiber, protein, and healthy fats. The go-to snack when you need real energy, not a sugar spike.

Time: 10 minutes  ·  Yield: About 20 balls

Ingredients

  • 200 g (1 cup packed) Medjool dates, pitted
  • 120 g (1 cup) raw almonds (or cashews, walnuts, or a mix)
  • 2 Tbsp raw cacao powder (or cocoa powder)
  • 1 Tbsp coconut oil, melted
  • 1 Tbsp chia seeds or ground flaxseed
  • ½ tsp vanilla extract
  • ¼ tsp fine sea salt
  • 2 Tbsp shredded coconut, cacao nibs, or sesame seeds (for rolling)

Method

  1. If the dates are dry or hard, soak them in warm water for 10 minutes and drain.
  2. Add the dates and nuts to a food processor. Pulse until the nuts are broken down and the mixture starts to clump together (about 30 seconds of pulsing).
  3. Add the cacao powder, coconut oil, chia seeds, vanilla, and salt. Process until the mixture holds together when pressed between your fingers. If too dry, add 1 tsp water at a time. If too sticky, add a tablespoon of oats.
  4. Roll into 1-inch balls. Coat in shredded coconut, cacao nibs, or sesame seeds.
  5. Refrigerate at least 30 minutes to firm up.
  6. *Storage:** Refrigerator for 2 weeks. Freezer for 3 months.
