
Date & Nut Energy Balls
Dense, naturally sweet, and packed with fiber, protein, and healthy fats. The go-to snack when you need real energy, not a sugar spike.
Time: 10 minutes · Yield: About 20 balls
Ingredients
- ●200 g (1 cup packed) Medjool dates, pitted
- ●120 g (1 cup) raw almonds (or cashews, walnuts, or a mix)
- ●2 Tbsp raw cacao powder (or cocoa powder)
- ●1 Tbsp coconut oil, melted
- ●1 Tbsp chia seeds or ground flaxseed
- ●½ tsp vanilla extract
- ●¼ tsp fine sea salt
- ●2 Tbsp shredded coconut, cacao nibs, or sesame seeds (for rolling)
Method
- If the dates are dry or hard, soak them in warm water for 10 minutes and drain.
- Add the dates and nuts to a food processor. Pulse until the nuts are broken down and the mixture starts to clump together (about 30 seconds of pulsing).
- Add the cacao powder, coconut oil, chia seeds, vanilla, and salt. Process until the mixture holds together when pressed between your fingers. If too dry, add 1 tsp water at a time. If too sticky, add a tablespoon of oats.
- Roll into 1-inch balls. Coat in shredded coconut, cacao nibs, or sesame seeds.
- Refrigerate at least 30 minutes to firm up.
- *Storage:** Refrigerator for 2 weeks. Freezer for 3 months.
