Elderberry Immune Gummies

Ingredients

• 1 cup elderberry syrup (see recipe below, or use store-bought)
• 3 tablespoons grass-fed gelatin powder
• 1 tablespoon raw honey (optional — the syrup is already sweet)
• 1 tablespoon lemon juice
• *For homemade elderberry syrup:**
• 1 cup dried elderberries
• 3 cups filtered water
• 1 cinnamon stick
• 4 whole cloves
• 1-inch piece fresh ginger, sliced
• 1 cup raw honey
• *Elderberry syrup method:**
• Combine elderberries, water, cinnamon, cloves, and ginger in a saucepan. Bring to a boil, then reduce to a simmer.
• Simmer uncovered for 45 minutes to 1 hour, until the liquid is reduced by about half.
• Strain through a fine-mesh strainer, pressing on the berries to extract all the juice.
• Let cool to below 40°C (104°F), then stir in the honey. (Adding honey to hot liquid destroys its beneficial enzymes.)
• Store in a glass jar in the fridge. Keeps for 2-3 months.
