Method

  1. Heat the grill to medium-high.
  2. Brush the cut sides of the peaches with melted butter.
  3. Place cut-side down on the grill. Cook for 3 to 4 minutes, until grill marks appear and the peaches soften slightly. Don't move them — let the grill do its work.
  4. Flip carefully and grill for 1 to 2 more minutes.
  5. Transfer to a plate. Drizzle with honey, dust with cinnamon if using, and top with a scoop of ice cream or a dollop of yogurt.
  6. Scatter with nuts and mint. Serve immediately.
  7. *Storage:** These are best right off the grill. You can grill them ahead and serve at room temperature, but they lose the contrast between warm fruit and cold ice cream.
  8. *Seasonal note:** The peaches need to be ripe but still firm — too soft and they'll fall apart on the grill. Freestone varieties work best because the pit comes out cleanly. Nectarines work equally well. So do plums, though they need only about 2 minutes per side.
