Herbal Honey Infusions
Infusing raw honey with herbs creates flavored honeys that are both delicious and functional. The process is simple — fresh or dried herbs are submerged in honey and left to infuse for 1-2 weeks.
Time: 5 minutes active, 1-2 weeks infusing · Yield: About 1 cup per infusion
Ingredients
- ●1 cup raw honey
- ●2 tablespoons dried culinary lavender buds
Method
- Stir the lavender into the honey in a clean jar. Make sure the buds are fully submerged.
- Seal and let infuse at room temperature for 1-2 weeks, stirring every few days.
- Strain out the lavender buds through a fine-mesh strainer, or leave them in (they're edible).
- *Uses:** In tea. On yogurt. Drizzled over goat cheese. In baked goods. Before bed in warm milk for relaxation.
