Ingredients
- ●Zest of 6 large lemons (yellow part only — avoid the white pith, which is bitter)
- ●120 ml (½ cup) 80-proof vodka
Method
- Using a vegetable peeler or microplane, remove the zest from the lemons in large strips or fine shreds.
- Place the zest in a clean glass jar. Pour the vodka over it and seal.
- Store in a cool, dark place. Shake every few days.
- After 6-8 weeks, strain and bottle.
- *Storage:** Room temperature for up to 2 years.
- *Tip:** Save the zested lemons — juice them and freeze the juice in ice cube trays for cooking.
