Spritz Variations
For the nights when you want a drink, not a project. These are light, refreshing, and designed to be sipped slowly — the European tradition of the aperitivo, where the drink is an invitation to relax, not an escalation.
Time: 3 minutes each · Yield: 1 cocktail each
Ingredients
- ●3 oz (90 ml) Prosecco or dry sparkling wine
- ●2 oz (60 ml) aperitivo/amaro/fortified wine
- ●1 oz (30 ml) club soda
- ●Ice
- ●Citrus or olive garnish
Method
- Fill a large wine glass with ice.
- Pour in the Prosecco first, then the aperitivo, then the club soda. This minimizes fizz loss.
- Stir once gently.
- Garnish and serve immediately.
- *Three Spritzes:**
- **Classic Aperol Spritz:** 3 oz Prosecco + 2 oz Aperol + 1 oz club soda. Garnish with an orange slice. *Bittersweet, orange, light — the universal crowd-pleaser.*
- **Cynar Spritz:** 3 oz Prosecco + 1½ oz Cynar + ½ oz fresh lemon juice + 1 oz club soda. Garnish with a lemon wheel and rosemary. *Earthy, herbal, more complex — for the adventurous drinker.*
- **Select Spritz:** 3 oz Prosecco + 2 oz Select Aperitivo + 1 oz club soda. Garnish with a large green olive and orange peel. *More bitter, less sweet — what they drink in Venice.*
- *Tips:**
- Always pour Prosecco first, then the spirit, then soda. This minimizes fizz loss.
- Use the largest ice cubes that fit your glass — slow dilution keeps the drink bright.
- Cheap Prosecco is fine for spritzes. Save the good stuff for drinking straight.
- *Storage:** Serve immediately. Spritzes wait for no one.
